下面是转帖的戚风蛋糕的 做法，我觉得这个教程最简单，也是我成功制作所依赖的。
我自己用的是西门子的烤箱，6寸的蛋糕，用了150温度烤了45分钟，实际感受可以再多一点点时间。

材料说明：
1、鸡蛋一定要新鲜，冬天用室温的就可以（夏天要用冰箱冷藏的）。
2、低筋面粉要过筛后再使用，防止搅拌的时候有面疙瘩无法拌匀。
3、砂糖，为什么一定要用砂糖呢？砂糖和绵糖甜度不同，而且更容易融化。请看：砂糖与绵白糖的区别
4、食用油，请选择没有味道的大豆油、玉米油等，不要放花生油或有怪味的，做出来味道怪怪。
5、牛奶，选用一般的市售袋装牛奶即可，也可以选择核桃奶、早餐奶等，做出的蛋糕更具风味，如果您对牛奶过敏，也可以用水来代替牛奶，加入的量不变。
6、白醋，加在蛋清中，帮助打发，因为蛋清是偏碱性的物质，放的越久碱性越大，越难打发，我喜欢健康的配方，相信大家也是一样，所以用白醋代替塔塔粉来打发蛋清，效果也很不错。
7、对于烤好后表面会有开裂的情况，亲们大可不必很纠结，这跟蛋白的打发硬度和烘烤的温度有关，只要不是裂的很厉害都是很好吃的蛋糕，如果开裂严重可将温度降低10度，一直降到表面有细小的裂纹就是比较理想的温度了。
8、出炉后请立即倒扣模具，这样可以使您的蛋糕回缩的轻一些，凉了以后表面会很平整。
关于烘烤温度的说明：
1个6寸圆模的量：
鸡蛋3个、低筋面粉60克、砂糖50克、食用油30克、牛奶37克、白醋几滴
烘烤:145度40分钟左右
1个8寸圆模的量：
鸡蛋5个、低筋面粉100克、砂糖80克、食用油50克、牛奶60克、白醋几滴
烘烤:170度50分钟左右
做法：
1、分离蛋清与蛋黄，蛋清打在无油无水的大盆中。
2、将蛋黄加入1/3砂糖，用打蛋器搅拌至颜色变浅，体积膨胀，后加入色拉油继续搅拌1分钟。
3、4、后加入牛奶继续搅拌1分钟。
4、将低筋面粉过筛后加入蛋黄糊中。
5、先不要打开电动打蛋器，将面搅湿后再打开电动打蛋器搅拌一下，时间不要超过5秒钟（搅拌时间过长会使面粉出筋，做出来的蛋糕就不蓬松）。
6、将打蛋头清洗擦干净，蛋白中加几滴醋快速打出粗泡。
7、先加入20克砂糖继续搅拌出细腻的泡沫，再加入20克砂继续搅拌（约5分钟），当盆内出现很深的纹路时，提起打蛋器查看蛋清的状态。
8、蛋头部分大约会有1厘米左右的小尾巴自然下垂，盆里是下部分的蛋白能挺起来，上部分有个小小的勾，并且不会与下面的蛋清粘连，这就是湿性偏干性打发（大约6-8分钟，根据鸡蛋的新鲜程度及温度）。
小贴士：
1、搅拌蛋黄糊的时候尽量动作快一些，因为蛋白在空气中放太久就不容易打发了。
2、做熟练的话可以先打发蛋白，然后放入冰箱冷藏再处理蛋黄糊，动作也应该尽量快些，放太久蛋白会消泡。
